From Pastured & not Industrial Framed

Simple Pastured (Free Range) Beef Bone Stock


Use a crockpot or "Instapot'…Will take 12-24 hours for large bones

  • Scald (Blanch) & Rinse with hot & cold water 

  • & PAT dry (To remove live & dead bacteria)

  • 24- hour LOWEST setting…

  • Add vegetables 4-8 hours & spice, seeds below….


 Simple Soup Stock

  1. Fresh chopped root vegetables

  2. Protein source…”Free range” chicken, whole fish-not farmed,  “free range” or wild pork hock, oxtail or beef bone (NOT FROM INDUSTRIAL FARMED  BEEF (Fed GMO Alfalfa or corn, trucked to market, muscles soaked in Cortisol & growing bacteria in the meat case & destroyed by cooking & left on to eat with the meat..


Like Pasteurized Dairy…

It is a bit like eating PB&J on Moldy Bread...

Chop a variety of Vegetables: onions, celery, kohlrabi, celery root, 

Simmer stock with spices, salt, cracked or whole peppercorns, bay leaves, Cajun spices..etc

Simmer in oven (slow cooker) at 210* or on stovetop - 4 or more hours 

Strain into jar & Vitamix the remaining bones & vegetable …

Home Milled in a Vitamix or Smoothie Blender (to avoid Over-Milled Commercial flour - Mostly Refined carbs with the Plant Protein & FIBER reduced by 50%

**  4 cups  Spelt, Enkir 

or any other Non-GMO Ancient Grain flour …(with 6 or more grams of Plant Protein-“Check lablel”)

**  1-Tbsp….Yeast (active dry)

Beef Bone Stock

Use a crock pot…Will take several days….

  • Scald (Blanch), Rinse with hot & cold water & pat dry (To remove live & dead bacteria)

  • 24 hour lowest setting

  • 4-8 hours ….add vegetables & spice below….


  1. Blanch PASTURED only (NO INDUSTRIAL FARMED-beef, poultry fish or pork) Bones with scolding water & allow to stand for several minutes to “kill Bacteria” from handling. Then… Rinse & Drain … Several times before starting cooking process…

  2. Place bones in a pot or a crockpot, add small amount of apple cider vinegar (lemon juice or other medium) and water to cover                     

  3. Let the mixture sit for 1 hour so the vinegar (or other medium) can leach the mineral out of the bones.

  4. Add more water if needed to cover the bones. For large bones bake (or crockpot) below boiling …Simmer a 200* for 24-36 hours)…

  5. Add  bay laves, whole peppercorns, turmeric, red peppers, Lemon grass, black teas, Whole small onions, Celery Root, & other root vegetables whole seeds (fennel, chia, whole allspice or whole nutmeg sesame etc) Bring to a boil (DO NOT BOIL) …            Stir OFTEN &  skim the scum from the top and discard.

  6. Reduce to a low simmer, cover, and cook for 24-72 hours (if you're not comfortable leaving the pot to simmer overnight, turn off the heat and let it sit overnight, then turn it back on and let simmer all day the next day)

  7. Add tender vegetable - roughly cut (shallots, leeks, parley-cilantro, deep green & leafy vegetables, Swiss Chard, Beet & beet greens Celery tops, carrots)…

  8. Add Spices & Sea Salt with (Kelp-Iodine), cracked pepper turmeric, lemon grass, chives, all spice 

  9. PEEL any vegetables..IF SUSPECT… GMO (To remove excess Lectin cause by GMO) 

  10. During the last 10 minutes of cooking, throw in a handful of fresh parsley for added flavor and minerals.

  11. Let the broth cool and strain it, making sure all marrow is knocked out of the marrow bones and into the broth.

  12. Add sea salt to taste and drink the broth as is or store in fridge up to 5 to 7 days or freezer up to 6 months for use in soups or stews.

Dee's Seafood Gumbo 

New Orleans Cook Book..(Adapt for Free Range &  Non-GMO) 


1 pound smoked sausage, sliced 1/4 inch thick

2 cups onions, chopped

2/3 cup green pepper-skin removed by heat, chopped

1/2 cup shallots, (scallion tops) chopped

2 tablespoons parsley, fresh, minced

1 whole “free range” chicken, 3 lbs or so, cut into pieces

2 pounds not farmed shrimp, fresh or frozen, peeled & deveined

1-tablespoon garlic, minced

2/3-cup EV coconut oil or duck fat from free range ducks or geese 

2/3-cup flour (whole grain SPELT or other Ancient Grain)


2 cups water

3 1/2 teaspoons Ses salt & Kelp (Iodine)…

1 1/4 teaspoons cracked black pepper

1/8-teaspoon cayenne

1 to 3 teaspoons crushed leaf thyme, dried (2 to 3 times more fresh)

3 whole bay leaves, crushed

2 1/2 to 3 tablespoons file powder, (optional) substitute okra for thickening (most of the time, I omit all together)

Assemble the ingredients, chop or mince as required. Heat oil in 8 qt kettle

over high heat.  Brown the chicken parts in the hot oil turning several

times to ensure even browning.  When the chicken is brown, remove it to a

heated platter and place in a preheated 175* oven to keep it warm.

THE ROUX:

Make the roux by gradually adding the whole grain spelt flour to the oil in the pot, stirring constantly.  Cook over low heat until a dark brown roux (color of milk

chocolate)is formed.


When the roux reached the right color, quickly add: sausage, onion, green

pepper, onion tops, garlic, and parsley(sometime I save parsley and add with

the seafood so as not to overcook). Continue to cook over low heat for 10

more minutes, stirring constantly.  then add 1/4 c cold water, the browned

chicken parts, and all the seasonings except the file powder. Mix gently but

thoroughly.  Keep heat low and gradually add the rest of the water or

chicken broth and bring to a simmer.  Simmer for 45 minutes.


Remove the chicken and some of the sausage with a slotted spoon.  Save for

another meal.  Add the shrimp to the gumbo and cook for 8 more minutes.

Remove the pot from heat and let simmer die down.  Add file powder if

desired.
